Tasteful Tuesday: Tomato Soup with Tortellini and Vegetables

Another snowstorm is headed our way, and we couldn’t think of anything better than a hearty, delicious soup packed with vegetables and pasta to make and eat for the occasion. This is a meat-free soup, but you could certainly add Italian sausage or beef to make it even more filling. The following recipe makes about four servings.

What You’ll Need:

  • 14.5 ounces beef or chicken broth
  • 46 ounces (6 cups) tomato sauce
  • 28 ounces (3.5 cups) whole tomatoes, halved
  • 9 ounces cheese tortellini, uncooked
  • 1 cup zucchini, peeled and diced
  • 1 cup sweet corn
  • 2 cloves garlic, minced
  • black pepper, oregano,
    and other preferred seasonings to taste
  • 1.5 cups fresh spinach
  • grated Parmesan cheese


  1. In a large soup kettle over low-medium heat, combine broth, sauce and the tomatoes (including the juice).
  2. Add tortellini, zucchini, corn, garlic and seasonings. Cook for 25 minutes, stirring occasionally. Add spinach and cook for at least ten more minutes.
  3. Sprinkle with Parmesan cheese and serve hot.

Tuesday Recipe: Crock Pot Sausage & Cheese Tortellini

Happy Cinco de Mayo! To celebrate, we’re putting a little Italian twist on a spicy crock pot recipe that you and your family can enjoy tonight for dinner, and as leftovers for the next couple of days. It’s as easy to put together as it is delicious, so don’t be surprised if it becomes an instant classic in your home.

What you’ll need:

  • Crock pot
  • 32 oz. chicken broth
  • 20 oz. of your favorite tortellini
  • 1 pound spicy ground Italian sausage
  • 2 cans diced tomatoes (seasoned to taste), undrained
  • 8 oz. cream cheese, softened
  • Grated Parmesan cheese if desired (for topping)


  1. Brown the sausage in a stove-top pan on medium heat, seasoning to taste.
  2. Add sausage and tortellini to the slow cooker, pouring the tomatoes and broth over the top. Add cream cheese in chunks.
  3. Stir to evenly distribute all the ingredients, making sure the tortellini is covered by the liquids.
  4. Cook on low in a crock pot for about 4 hours and 30 minutes. Stir at 2 hours and again at 4 hours, removing the lid for the last 30 minutes of cooking. Serve hot, adding Parmesan cheese if desired, and enjoy!
