Sweet Potatoes in Maple Syrup

Country Recipe BoxIt’s almost February which is Sweet Potato Month. Packed with vitamin A, warm, roasted sweet potatoes are a great treat.

You Will Need:
2 ½ lbs sweet potatoes
1/3 C pure maple syrup
2 Tbs melted butter
1 Tbs lemon juice
2 Tbs brown sugar
½ tsp salt
pepper to taste

Instructions:
Preheat oven to 400 degrees.
Peel and cut potatoes into 1 to 2 inch chunks.
Put sweet potatoes in a large baking dish.
Combine butter, syrup, lemon juice, salt, pepper, and brown sugar in a small bowl.
Pour over potatoes.
Cover and bake 45-50 minutes, stirring every 15 minutes.

Simple Turkey Glaze

Turkey Wagon CenterpieceThanksgiving is two days away! But it’s not too late to try out something new on that traditional turkey.

You Will Need:
1 C triple sec
1 C orange juice
1 qt Maine Maple Syrup

Instructions:
Baste turkey with glaze every 15 minutes.

Baked Apples in Maine Syrup

Pumpkin PotholderMore fantastic uses for Maine syrup. Try this as a Thanksgiving treat.

You Will Need:
4 large apples
1 C apple cider
2 Tbs lemon juice
1/3 C dried currants
1/2 C Maine Maple Syrup
1/4 tsp ground cloves
1/4 tsp ground cinnamon

Instructions:
Preheat oven to 375 degrees.
Core and seed apples.
Stuff with currants.
Place in baking dish.
Combine remaining ingredients.
Pour over apples
Bake uncovered 45min, basting often.
Serve warm.
