Melon and Strawberry Fruit Salad

The humid days of August are in full swing, which means we need a dish that not only keeps us cool but requires little effort to prepare. This fruit salad combines melons and strawberries with a little bit of honey for a sweet and refreshing snack, lunch or side for the rest of the summer.

Melon & Strawberry Fruit Salad

Summer RecipeWhat you’ll need:

  • 1 small watermelon, cubed
  • 1 cantaloupe, cubed
  • 1 honeydew, cubed
  • 1 pineapple, cubed
  • 4 cups strawberries, sliced
  • 2/3 cup honey
  • Mint for garnish, if desired

Directions:

  1. In a large bowl or on a large serving platter, combine all fruit.
  2. Mix in honey; garnish with mint if desired. Serve and enjoy.

Tuesday Recipe: Mini Cherry Cheesecake Tarts

Cherries

April 23, 2014 is National Cherry Cheesecake Day! Celebrate with easy to make and fun to eat miniature cherry cheesecakes made in a muffin tin.

Ingredients

  • 2 (8 oz.) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon pure vanilla extract
  • 2 eggs
  • 12 vanilla wafers or crushed graham cracker crust
  • 1 (21-ounce) can cherry pie filling, or any pie filling of your choice, homemade or canned

Directions

  1. Preheat oven to 350° F.
  2. Place a paper or silicone cupcake liner in each cup of the muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each addition.
  3. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry filling on top, or a pie filling of your choice.

Orange, Pineapple, Papaya Salad

Add a dollop of whipped cream to turn this into an amazing dessert, or a quarter cup of cottage cheese and a sprinkling of granola for a healthy breakfast.

You Will Need:
1 medium sized pineapple, cut into 1-inch pieces
4 oranges, segments cut out from membrane
1 large papaya, cut into pieces
2 Tbs sliced almonds

Instructions:
Cut and mix fruits together.
Sprinkle with almonds.
