The second week of September is Vegetarian Awareness Week. With more people each year becoming vegetarian to support healthier lifestyles, others are just curious about some of the great vegetarian meals that are now being offered at restaurants. Today’s featured recipe celebrates a meatless diet. A Linguini & Veggie Salad, courtesy of our Easy 5 Ingredients or Less Recipes Cookbook, shown below.
What You’ll Need:
16-oz. pkg. linguini, prepared
8-oz. bottle Italian salad dressing
1 to 2 tomatoes, diced
1 to 2 cucumbers diced
3 T. salad seasoning
**Farmers’ markets are still in full swing; use local produce, in this case tomatoes and cucumbers for a fresher taste in your salad.

1. Rinse linguini in cold water; drain and place in a serving dish.
2. Pour Italian salad dressing on top; mix well.
3. Fold in tomato, cucumber and salad seasoning.
4. Mix well; cover and refrigerate for 24 hours.
