February is cherry month. Treat your Valentine to these tasty tidbits.
You Will Need:
2 8oz packages cream cheese
1 C sugar
1 tsp vanilla extract
1 egg, lightly beaten
1 12oz can cherry pie filling
1 1/2 C finely ground graham cracker crumbs
6 Tbs butter, melted
1/2 tsp ground cinnamon
12 mini foil cupcake liners
Instructions:
Beat cream cheese until smooth.
Gradually beat in sugar.
Beat in vanilla.
Add egg and beat until blended.
Combine graham cracker crumbs, butter, and cinnamon.
Press 1 tsp graham cracker mixture into bottom of each cupcake liner.
Spoon cream cheese mixture into liners.
Bake at 350° for 15-20 minutes or until puffed and set.
Cool on a wire rack for 1 hour.
Spoon cherry pie filling into the center of each cheesecake.
Store in the refrigerator.
