Mild Chili Recipe

Lexington Hand GraterCelebrate National Chili Month as the days get colder. Try this mild recipe.

You Will Need:
1 lb ground beef
1 16oz can kidney beans
4 cloves garlic, finely chopped
1 lg onion, diced
1 16oz can whole tomatoes
3 oz. can tomato paste
3 Tbs chili powder
1 Tbs cumin
2 Tbs fresh cilantro leaves
2 tsp brown sugar
1 jalapeno pepper finely chopped
1/4 tsp ground cayenne pepper
1 Tbs olive oil
shredded cheese (optional)

Saute onions and olive oil in medium skillet.
Remove from heat and set aside.
Brown ground beef and garlic in a medium stock pot at medium heat, breaking up ground beef.
Add onions and remaining ingredients to ground beef/garlic.
Bring mixture to a simmer.
Reduce heat and maintain simmer.
Cook uncovered for 1 hour, checking occasionally for consistency.

Serve sprinkled with cheese.
