Hummus, Vegetable, and Pita Summer Sandwich
To celebrate National Farmer’s Market week, try this light, refreshing sandwich. The kids will love stuffing the pockets.
You Will Need:
1 Pita or Pocket bread
2 Tbs hummus
1/4 cucumber, sliced
1/2 tomato, sliced
1/4 green bell pepper, sliced
1/4 red, yellow, or orange bell pepper, sliced
Halve pita bread and loosen into pockets.
Spread hummus into halves.
Divide vegetables and stuff into pockets.
