Maple Roasted Sweet Potato Salad
You Will Need:
2 lbs. sweet potatoes or yams, peeled and cubed
3 to 4 tablespoons Maple Syrup
3/4 cup Mayonnaise
1 medium Granny Smith apple, cut into 1/4-inch cubes
1/2 cup dried cranberries, raisins, or dried cherries
(optional 1/4 cup chopped walnuts)
Preheat oven to 400°.
In medium bowl, toss potatoes with Maple Syrup.
Spread potatoes on a baking sheet and bake, 30 minutes until potatoes are tender
In large bowl, combine potatoes, apple, dried fruit, nuts (if desired), and remaining Mayonnaise
Toss to coat.
Chill before serving.
