Here’s a quick chili recipe to celebrate Chili Day. This is great made vegetarian or with leftover meat, in fact, it’s worth going out of your way to have leftover hamburgers for this recipe, but it can be made with several leftover meats or with no meat at all.
You Could Use:
Leftover Hamburgers (1 or 2)
Leftover Chicken (1 breast)
Leftover Steak (Just kidding. Who has leftover steak?)
Leftover Taco meat
You Will Need:
2 24oz Jars of Southwest Style Salsa (Giant brand or Wall Mart. The kind with corn and black beans in it.)
1 15oz Can of Black Beans
1 15oz Can of Kidney Beans (Dark or Light)
1 15 oz Can of Kernel Corn
4 T Chilli Powder
2 T Spicy Brown Mustard
1 t Garlic Powder
(If you’re not using any meat, add one additional 15oz can of beans)
Instructions:
Combine ingredients, crumbling or dicing meats.
Simmer for 20 minutes.
Serve with rice for vegetarians or people with food allergies, or corn bread and cheddar cheese.
