Tasteful Tuesday: If You Like Piña Coladas

Pina Colada Recipe | Sturbridge Yankee Workshop

July 10th is Piña Colada day, so if you haven’t yet enjoyed one of these creamy cocktails this summer, today is the perfect day to indulge! Below is a classic Piña Colada recipe, but we’ve also included a Mango Piña Colada Smoothie recipe sans alcohol for continue enjoyment.

Piña Colada Recipe (serves 2)

What you’ll need:

  • 6 ounces pineapple juice
  • 1/4 cup crushed pineapple
  • 2 ounces white rum (or dark, if you prefer)
  • 2 ounces cream of coconut
  • 4 cups ice

Directions:

  1. Combine all ingredients in a blender and puree until smooth.
  2. Pour into a chilled glass (a Poco Grande or Hurricane glass is recommended) and garnish with pineapple, cherries, or other fruit. Enjoy!

Pineapple SlicesMango Piña Colada Smoothie (serves 2)

What You’ll Need:

  • 1/2 mango, peeled and seeded
  • 3/4 cup ice
  • 1 tablespoon white granulated sugar
  • 3/4 cup pineapple juice
  • 1/4 cup heavy cream
  • 14 ounces coconut milk

Directions:

  1. Cube the mango and along with the other ingredients, place in a blender and puree until smooth.
  2. Pour into a chilled glass or cup (for home or on the go) and enjoy.

Peach Sangria Recipe

Mason Jar Beverage DispenserRefer to this sangria recipe when you are looking to serve brunch, dinner or weekend guests a cool, refreshing beverage during the summer or throughout the year. For the best tasting results, we recommend letting the sangria chill for at least 12 hours before serving.

What you’ll need:

  • 1 (750 milliliter) bottle dry white wine
  • 3/4 cup peach schnapps
  • 6 tablespoons frozen lemonade concentrate, thawed
  • 1 pound white peaches, pitted and sliced
  • 1½ cups seedless red grapes, halved

Directions:

  1. In a large pitcher or beverage dispenser, combine dry white wine, peach schnapps and  lemonade concentrate; stir until well mixed. Add sliced peaches, red and green grapes.
  2. Refrigerate for 12 hours, or at least 3, to blend flavors. Serve over ice and if desired, your choice of sparkling water or lemon-lime soda.

Lemonade and Cranberry Refreshers

With Memorial Day celebrations going on this weekend and the official start to summer just around the corner, you’re going to need a refreshing beverage to complement all of the homemade food you’re sure to eat at barbecues, weekend brunch and summer parties. We have found two perfect recipes that are the best of both worlds: simple to make and absolutely delicious! You can add both to your favorite liquor or combine with a sangria recipe for a little extra kick, too.

Classic Lemonade

What you’ll need:

  • 5 lemons
  • 1 1/4 cup granulated sugar
  • 1 1/4 quarts water

Directions:

  1. Peel the lemon rinds from all lemons and cut the rinds into 1/2-inch slices. Set the lemons aside.
  2. Place the rinds into a large bowl and sprinkle all of the sugar over them – do not stir or mix. Let stand for one hour.
  3. In a covered saucepan, bring the water to a boil. Pour the hot water over the sugared lemon rinds and let cool for about 20 minutes. Remove the rinds and discard.
  4. In a medium bowl, squeeze the lemon juice from the set aside lemons (step 1). Pour the juice through a strainer into the sugar mixture, stir well. Pour into a pitcher and place in the refrigerator. Serve in a glass over ice.

Cranberry-Pomegranate Cooler

What you’ll need:

  • CranberriesCubed ice
  • 32 fluid oz. cranberry-pomegranate juice
  • 8 fluid oz. sparkling water
  • 1 lime
  • 1 cup cranberries

Directions:

  1. Fill a pitcher or punch bowl about 1/3 full of ice. Add cranberry-pomegranate juice and top with sparkling water.
  2. Cut up lime in thin slices, add to pitcher/punch bowl. Pour in cranberries, stir and serve!
