Tasteful Tuesday: Ranch Snack Mix

This snack mix recipe has full flavor and plenty of crunch. It’s perfect for school lunches, after school snacks, eating on the go and for serving at holiday parties.

Ceramic Measuring Cups SetWhat You’ll Need:

  • 8 cups Chex™ cereal
  • 1 cup bite sized pretzel twists
  • 1 cup cheese crackers
  • 1 cup mixed nuts
  • 3 tablespoons unsalted butter, melted
  • 1 (1 ounce) package ranch dressing
    & seasoning mix

Directions:

  1. Preheat the oven to 200°F. Line a large baking pan with parchment paper and set aside.
  2. In a large bowl, combine the cereal, pretzels, crackers, nuts and butter until the dry ingredients are coated.
  3. Add seasoning mix and stir until fully incorporated, OR, transfer the ingredients from Step 1 into a large freezer bag, add seasoning mix and shake until fully incorporated.
  4. Pour the snack mix onto the parchment lined baking pan and bake in the oven for 50 minutes – 1 hour, stirring every 15 minutes. Let cool for about 15 minutes then serve or store in an airtight container.

Parmesan Crostini with Garlic Butter Recipe

French BaguettesLooking for an easy appetizer recipe for a mid-afternoon soiree, or want to include a complementary appetizer at your wine and cheese party? Look no further than the Parmesan Crostini!

What you’ll need:

  • 2 French baguettes,
    cut into 1/2-inch slices
  • 1½ cup melted butter
  • 1/4 cup fresh garlic, minced
  • 1½ cup Parmesan cheese, grated

Directions:

  1. Preheat oven to 250°F and set out two large baking sheets.
  2. Arrange baguette slices onto the baking sheets.
  3. In a small bowl, combine the melted butter and garlic. Drizzle half of the mixture over the bread slices.
  4. Bake in preheated oven for about 10 minutes. Turn the slices over and drizzle remaining mixture over the slices. Return to the oven and continue baking for 50 minutes – 1 hour (or until golden brown), flipping the slices over every 10 minutes.
  5. Remove from oven and immediately sprinkle the top of each slice with grated Parmesan cheese. Serves about 14 people.

Fruit and Yogurt Popsicle Recipe

Popsicle Recipe

These popsicles are not only great for cooling you down on a hot day, but are a simple and healthy snack solution for any time of day (and any age group). Use a popsicle mold or the paper cup method (described below) and stay cool this summer!

What You’ll Need

  • 2 cups your choice of fresh fruit
    (ex: strawberries, banana, blueberries, mango, kiwi)
  • 2 cups vanilla yogurt
  • 1/4 cup granulated sugar (omit for less sweet pops)

Directions

  1. Place all ingredients into a blender. Blend until slightly chunky or smooth.
  2. Fill popsicle mold per its instructions. If using Dixie paper cups, fill about 3/4 of the way with the fruit and yogurt mixture. Place a piece of tinfoil over the top and poke a popsicle stick through.
  3. Place in the freezer for at least 5 hours before serving. Enjoy for up to 4 days.
