We have apple fever! All month long we will be trying and featuring recipes that incorporate apples in any way, and to start, here is a muffin recipe sure to become a family favorite every morning throughout the fall. Enjoy!
What you’ll need:
- Hand mixer
- 12-muffin tin or pan
For the muffins:
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter
- 1 cup white sugar
2 eggs
- 1 1/4 teaspoons vanilla
- 2 1/2 cups Macintosh apples,
peeled and chopped
For the crumbled topping:
- 1 cup packed brown sugar
- 3 tbsp all-purpose flour
- 3 tsp ground cinnamon, or to taste
- 2 1/2 tbsp butter
Directions:
- Preheat oven to 375°F and grease muffin pan.
For the muffins:
- In a medium bowl, mix flour, baking powder, baking soda and salt. Set aside.
- In a large bowl, use hand mixer to beat together butter, sugar and eggs until smooth; mix in vanilla. Set mixer on medium setting and add apples, gradually blending in flour mixture from step 1.
- Spoon mixture into prepared muffin pan.
For the crumbled topping:
- In a small bowl, mix brown sugar, flour and cinnamon. Cut in butter and combine until mixture is crumbly.
- Sprinkle over tops of mixture in muffin pan.

- Bake for approximately 30 minutes in the preheated oven. Use a toothpick to test that the mixture cooked all the way through.
- Cover with tinfoil and cool in muffin tin for 5 minutes
- Remove to a cooling rack and serve.
