Apple Rings With Gorgonzola Cheese

Tart apples with creamy cheese = a yummy treat.

Ingredients

  • 2 tart apples
  • Juice from half of a lemon (2 tbls)
  • 4 oz whipped cream cheese
  • 2 tbls honey
  • 1/4 cup crumbled Gorgonzola or other blue cheese
  • 1/2 cup candied nuts, chopped

1. Core the apples with an apple corer, making sure to remove all of the seeds. Cut apples horizontally into fairly thin rings and brush both sides of rings with lemon juice; set aside.

2. In a small bowl stir together cream cheese and honey. Spoon cream cheese mixture into a small resealable plastic bag; seal bag. Snip off a corner of the bag. Pipe cream cheese mixture onto apple rings. Sprinkle with Gorgonzola cheese and candied walnuts. Serve immediately or cover and chill for up to 2 hours.

Ingredients

  • 1  cup  coarsely chopped walnuts
  • 1  tablespoon packed brown sugar
  • 1  teaspoon vanilla
  • dash salt
  • dash crushed red pepper


Directions

  1. Preheat oven to 400 degrees F. Line a 9×9x2-inch baking pan with foil or parchment paper; set aside. In a small bowl stir together the coarsely chopped walnuts, packed brown sugar, vanilla, salt and crushed red pepper.
  2. Spread nut mixture in prepared pan. Bake about 10 minutes or until nuts are toasted, stirring twice. Cool.

Peppered Herb Cheese Ball

No holiday party is complete without a cheese ball!

Ingredients

  • 3  tablespoons fresh chives
  • 3  tablespoons  fresh basil
  • 2  tablespoons fresh parsley
  • 1 8 ounce package cream cheese, softened
  • 4 ounces goat cheese
  • 1/4 – 1/2  teaspoon cracked black pepper
  • 1 clove garlic, minced
  • Assorted crackers

1. In a shallow dish combine 1 tablespoon of the chives, 1 tablespoon of the basil, and the parsley; set aside. In a medium bowl beat cream cheese and goat cheese with an electric mixer on medium speed until smooth. Beat in remaining 2 tablespoons chives, remaining 2 tablespoons basil, the pepper, and garlic. Form into a ball.

2. Roll ball in herb mixture. Wrap and chill cheese ball for 4 to 24 hours. Makes twelve 2-tablespoon servings.
