Tuesday Recipe: Blueberry Gingerbread

In honor of Gingerbread Day, today’s featured recipe is an update on the traditional gingerbread with a fresh Maine ingredient. Our Blueberry Gingerbread recipe is easily made with our made in Maine, Blueberry Gingerbread Mix. What You’ll Need

1 package Blueberry Gingerbread Mix (ingredients: enriched flour, baking soda, salt, sugar, cinnamon, ginger, & blueberries packed in water)

1 egg

1/3 cup liquid shortening (or vegetable oil)

1 cup molasses

1 cup very warm water


1. Drain blueberries

2. Pour mix into bowl.

3. Add egg, shortening or oil, warm water, and molasses.

4. Beat with an electric mixer for 1-2 minutes until smooth.

5. Gently fold in the blueberries.

6. Bake at 350° F in an 8×8, greased pan for approximately 50-55 minutes.

** We suggest serving for breakfast or dessert, but anytime of day will welcome this delicious treat. Add warm or cold whip cream, or vanilla ice cream, for a refreshing contrast in flavor.
