Tuesday Recipe: Blueberry Gingerbread

In honor of Gingerbread Day, today’s featured recipe is an update on the traditional gingerbread with a fresh Maine ingredient. Our Blueberry Gingerbread recipe is easily made with our made in Maine, Blueberry Gingerbread Mix. One of our website exclusive baking mixes, this yummy bread boasts freshly packed, wild Maine blueberries; perfect for a taste of Maine at your next holiday gathering. What You’ll Need

1 package Blueberry Gingerbread Mix (ingredients: enriched flour, baking soda, salt, sugar, cinnamon, ginger, & blueberries packed in water)

1 egg

1/3 cup liquid shortening (or vegetable oil)

1 cup molasses

1 cup very warm water

Directions

1. Drain blueberries

2. Pour mix into bowl.

3. Add egg, shortening or oil, warm water, and molasses.

4. Beat with an electric mixer for 1-2 minutes until smooth.

5. Gently fold in the blueberries.

6. Bake at 350° F in an 8×8, greased pan for approximately 50-55 minutes.

** We suggest serving for breakfast or dessert, but anytime of day will welcome this delicious treat. Add warm or cold whip cream, or vanilla ice cream, for a refreshing contrast in flavor.
