August is National Orange & Papaya Month, and to celebrate here is a very orange-y themed accompaniment to a breakfast, lunch or is even great as sweet, healthy snack. Today’s featured recipe is a Sweet & Tangy Fruit Dip, courtesy of our Farmers’ Market Favorite Recipes Cookbook.
What You’ll Need:
1 c. cottage cheese
3 T. plain yogurt
2 t. honey
1 T. orange juice
2-1/2 T. orange marmalade
2 T. sweetened flaked coconut
Your favorite fresh fruit, sliced.
**Try orange and papaya slices for a real treat with muffins for breakfast, salad for lunch, or as is for a healthy mid-day snack this summer.
1. Place all ingredients except coconut and fruit slices in a food processor.
2. Process until smooth and creamy.
3. Stir in coconut. Refrigerate until chilled.
4. Serve with fresh fruit. Makes approximately 10 servings.
