Tuesday Recipe: Garden-Fresh Gazpacho

In honor of National Farmers’ Market Week this week, as determined by the Farmers Market Coalition, we celebrate healthy eating habits and nutrition. Eating fresh food from your local farmers’ market is a great way to boost energy, save money, support community efforts, and improve your overall diet. Today’s featured recipe is a Garden-Fresh Gazpacho. Enjoy!


What You’ll Need:

6-8 tomatoes, chopped

1 onion, finely chopped

1 cucumber, peeled & chopped

1 green pepper, chopped

2 T. fresh parsley or cilantro, chopped

1 clove garlic, finely chopped

1 to 2 stalks celery, chopped

2 T. lemon juice

4 c. tomato juice

4 drops hot pepper sauce

salt & pepper to taste

Optional: a dollop of sour cream

Directions:

1. Combine all ingredients in a large large lidded container or gallon-size Mason jar.

2. Refrigerate until well chilled.

3. Dollop servings with sour cream, if desired. Garnish with additional parsley or cilantro.

4. Serves 12 to 15, enjoy!
