In honor of National Pancake Week this February 19th-25th 2012, we offer to you a delicious blueberry pancake topping. In Maine of course we love our blueberries, but here is a variation on the traditional blueberry pancake breakfast.
Blueberry Vanilla Pancake Topping
1 Cup of Maple Syrup
1 Vanilla Bean, split and scraped lengthwise
1 Pint of Fresh Blueberries
3 Tbs. of Cane Sugar
1 tsp. of Lemon Zest
Directions: Bring blueberries, maple syrup, sugar, vanilla bean and lemon zest to a simmer over low heat. Simmer about 15 minutes. Remove from the heat and chill overnight for best taste in the morning. Strain; serve warm or at room temperature over warm, buttered pancakes.
