You Will Need:
1 (2 lb) head cauliflower, cored, and cut into 1″ florets (about 8 cups)
4 Tbsp oil, divided
1 tsp minced fresh ginger
1 garlic clove, pressed or minced
1 1/4 Cups ketchup
1/4 Cup soy sauce
2 Tbsp sugar
1 Tbsp ground cumin
salt and pepper, to taste
Preheat oven to 400°F.
Toss cauliflower and 2 Tbsp oil in large bowl.
Transfer to medium rimmed baking sheet.
Roast until very tender, stirring occasionally, about 45 minutes.
Heat 2 Tbsp oil in small saucepan over medium-low heat.
Add ginger and garlic.
Sauté for about 3 minutes.
Add ketchup, soy sauce, sugar, and cumin.
Bring to boil, whisking to blend.
Reduce heat to low and simmer for 1 minute, whisking constantly.
Take cauliflower out of the oven and transfer to large bowl.
Season to taste with salt and pepper.
You can either toss the cauliflower with barbecue sauce or dip.
